Pastured Goat Meat
Purchase a whole goat from us with only customer preferred cuts. Lead time for processing your goat may be 10 to 14 days depending on schedule. Weight range 24 – 26 lbs. A standard whole goat includes: 2 Racks 8 Loin chops (4 packs of 2 chops) 4 Leg shanks 2 Leg roasts 2 Shoulder roasts 2 lb Ground 2-4 lbs bone-in meat for stew Custom cuts are available for an additional $25 fee (choose custom option and add note on cuts desired). Whole carcass for roasting (not cut up) is available as a custom order. Additional shipping costs are required due to over sized container requirement. Allow 2-3 weeks lead time.
Pastured Goat Meat
The rack of goat is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack contains 8 ribs. The chine (feather bones) is removed for preparation to French. Goat racks are generally smaller than lamb racks and have less fat. Our half rack option is perfect for two. 100% grass fed goat.

Pastured Lamb Meat
Lamb shoulder chops are excellent for marinated,slow cooking, and braising methods. They are often cooked in a slow, moist braise. In about 90 minutes they will be fork tender with great flavor. Shoulder chops contain more fat and connective tissue than other chops and respond well to slow cooking methods. The bone adds richness, flavor and nutrients. This is an economical cut preferred by many customers. 100% grass fed. 1 inch thick, 1-2 chops per order. Approx 13 to 16 oz
Pastured Lamb Meat
Lamb Shanks are tender, flavorful cuts from the lower leg, slow-cooked to perfection for rich, fall-off-the-bone meat. Each shank weighs about 1–1.5 lbs and is ideal for braising or roasting.
Pastured Goat Meat
Our leg of goat is center cut to provide the prime center section of leg. The rump and shank have been removed for easier cooking and consistently tender meat. This results in flavorful meat with a high meat to bone ratio. Rub with olive oil and your favorite spices. 100% grass fed goat. Weight range: Petite: 2.3 – 2.9 lb Small: 3.0 – 3.4 lb Medium: 3.5 – 4.2 lb Large: 4.3 – 5.0 lb
Pastured Goat Meat
Our goat shanks Osso Bucco style are cross cut 2 times. Osso Bucco is Italian for bone with a hole and refers to the marrow in the center of the cross cut shank. The reason for cutting is to expose the richness of the bone marrow that adds nutrients and flavor. They can be seasoned, slow cooked and serve on rice or pasta. 100% grass fed goat. Shanks cut into approximate 1 to 2 inch individual pieces. Weight range 1.0- 1.1 lb
Pastured Lamb Meat
The boneless leg of lamb is easy to carve and serve. This roast has been deboned, rolled and tied for your convenience. Rub with olive oil, your favorite spices, and roast. To serve simply slice. This is also a good option for cutting kabobs, stew meat, stir fry or to butterfly for grilling. Buy 100% grass fed leg of lamb online. Weight range: Small: 2.6 – 3.6 lb. Medium: 3.7 – 4.8 lb. Large: 4.9 – 5.9 lb.
