It is hand-selected, dry-cured, carefully salted and seasoned with honey and maple syrup and is a delicious addition to sandwiches, omelets, and soups. Easy to slice as needed. As this is an old fashioned dry-cured, smoked bacon it is salty. Made from Shepherd Song Farm 100% grass fed lamb, it will make for an exciting change from regular bacon. No nitrates or nitrites added except for those natually occurring in celery powder and sea salt. Slabs range in size and will total approximately .6 to 1.0 lb slabs. Pastured Lamb Meat
Lamb shoulder chops are excellent for marinated,slow cooking, and braising methods. They are often cooked in a slow, moist braise. In about 90 minutes they will be fork tender with great flavor. Shoulder chops contain more fat and connective tissue than other chops and respond well to slow cooking methods. The bone adds richness, flavor and nutrients. This is an economical cut preferred by many customers. 100% grass fed. 1 inch thick, 1-2 chops per order. Approx 13 to 16 oz
