The rack of lamb meat is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack contains 8 ribs. The chine (feather bones) is removed for preparation to French. This makes Frenching easier.  It also allows the lamb meat rack to be cut into chops with a knife between the rib bones. 100% grass fed lamb meat. Serves 4

Large:  2.4 – 3.2 lb.
Medium:  1.7- 2.4 lb.
